Cranberry – Walnut Scones
Ingredients:
2 cups all-purpose flour
¼ tsp. baking soda
1 Tbs. baking powder
1/3 cup sugar
2 Tbs. margarine
1/3 cup dried cranberries
1 Tbs. vanilla extract
1 cup nonfat buttermilk
vegetable cooking spray
3 Tbs. chopped walnuts
1 ½ tsp. sugar
Pre-heat oven to 400F. Combine flour, baking powder, baking soda, and sugar in a medium bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Stir in cranberries. Add buttermilk and vanilla, stirring with a fork until dry ingredients are moistened. Spoon 2 heaping tablespoonfuls of dough, 2 inches apart, onto baking sheets coated with cooking spray. Sprinkle evenly with walnuts and 1 ½ tsp. sugar. Bake at 400F for 15 to 17 minutes or until golden. Makes 12 scones.
